Chef AJ began her interest with vegan food back in the 1970s as someone who ate a lot of vegan junk food, not a lot of vegetables. Over the years a health scare opened her eyes to the fact that she needed to look at how to bring more vegetables into her life, that simply eating vegan junk food, wasn't enough, it needed to include lots of whole plant-based foods.
